Le Rendez-Vous alcohol-free wine launches

Independent winemakers in Languedoc since 1605, the Famille Fabre is now exploring new territory -  alcohol-free wine.

The new venture began in the vineyard in Cruscades, in the Corbières mountain range, where the family selected a Muscat plot for the aromatic intensity of its grapes. The wine is then de-alcoholised under vacuum at the lowest possible temperature to preserve the aromatic qualities.

The Famille Fabres says it is approaching this emerging category with the same high standards as their other wines, selecting high-quality raw materials, then adapting the technique to preserve the wine’s identity.

Famille Fabre’s cultivates 300 hectares of vineyards across five estates.Resilient grape varieties, agroforestry, crop diversification, sulphite-free wines, lighter bottles, ciders, beers, and even alcohol-free wine: recent years have seen a growing number of experiments. This spirit of innovation has become a defining hallmark of the estate.

Vinification process

In stainless steel tanks, with temperature control during fermentation. Cold stop of fermentation, to retain a slight sweetness. The wine is then de- alcoholised by vacuum distillation.
